Leo and the Rattlesnake …

Can’t say enough good things about the bar at 11 Madison Park. The Boss and I had down time before a dinner reservation and grabbed a seat at the bar (we have done this several times) and were lucky enough to have Leo Robitschek, the head bartender – in fact every time we’ve come in for drinks we have been lucky to have Leo – be our guide on our drink journey. Leo is not only a fountain of drink knowledge but he is a super nice guy who’s more than willing to entertain my cocktail geek questions.

You cannot go wrong picking a drink off the menu and for my first drink I did just this sampling the Beau Four Cocktail, a drink comprised of  bourbon, Dolin Dry Vermouth, Amaro Nardini, Amaro Cio Ciaro, and Cucumber. It was just what I like in a a drink – a boozy forward sort of riff on a Manhattan with a cool fresh taste of cucumber – just great.  My second drink was down right amazingly-perfectly-totally-awesomely good — I opted for a bartender selection specifying Genever as the spirit of choice but an open playing field after that.  What came out was Leo’s play on a Rattlesnake. Judging by the various versions of this recipe that are available Leo’s version was closer to the Savoy version Erik posted on a while back but with a few proportion changes.  The drink was light with a beautiful cloud of egg white foam and upon tasting you are hit with a balanced profile of malty grain, citrus and absinthe.  Just fantastic.  I was ashamed to ask for the recipe so now I need to figure out how to email Leo for the recipe.

    Bols Genever Rattlesnake
    2 oz Bols Genever
    1 oz Simple Syrup (1:1)
    3/4 oz Lemon Juice
    1 egg white (3/4 oz)
    dry shake, shake with 1 big cube.
    Strain into a cocktail glass primed with absinthe
    top with absinthe
